Sweet Potato Soup

Calling all sweet potato fans! This hearty sweet potato soup will leave you feeling full, in the healthy kind of way.  The recipe is really versatile and only requires one pot to cook so its perfect to make in Stanley the Bus!

We used our stove top to heat up the sweet potatoes, however this could have easily been made over a campfire, or grill if need be. 

The recipe yielded enough soup for the five of us to have plenty to eat, but there was definitely nothing left for seconds and we all licked our bowls clean.

I added more red chili flakes to mine after it was cooked to give it more heat, however you can add or remove to achieve your desired taste.

The soup requires little effort and produces an extremely flavorful meal.  I highly recommend it to anyone who remotely likes sweet potatoes!


Sweet Potato Soup

Ingredients:

1 tbsp butter
5 sweet potatoes
4 cups vegetable stock
Red chili flakes
1 onion
1 or 2 cloves of garlic
Ground coriander

Cookware:

Pot
Whisk, Hand Blender
Knife

Directions:

1. Wash and peel the sweet potatoes.
2. Cut sweet potatoes into small cubes.
3. Melt better in pot and add onions and garlic allow them to cook down until soft.
4. Add sweet potatoes and stock to pot.
5. Let sweet potatoes cook until soft and mash-able.
6. Remove from heat and allow pot to cool down some.
7. Using hand blender or whisk, blend sweet potatoes until smooth consistency is reached.
8. Add red chili flakes and ground coriander to taste.
9. Serve hot.
