Peanut Pineapple Stew

Peanut butter was one of my favorite foods as a child. I would put it on anything I could to satisfy that afternoon snack or late night craving.

If I had a peanut allergy, my life probably would not have been the same.

Now that you know my slight obsession with peanut butter, I am sure you can imagine the large smile on my face when we pulled out Chris's recipe for Peanut Pineapple Stew.

A one pot magical recipe that produces one of the thickest stews I have ever eaten. The nutty flavor of the peanut butter blends really nicely with the pineapples.

The recipe is also extremely easy to manipulate by adding the vegetables that you love most! We poured ours over white rice, but you can eat it alone as well.

Ingredients:

1/2 jar peanut butter

2 med size onions

2 Pineapple cans

Hot sauce/Tabasco

Salt

Pepper

Cookware:

Pot

Knife

Directions:

1. Cut up onions and begin cooking them down on low heat.

2. Add 2 cans pineapples and their juice to the pan and cook on medium heat for a few minutes.

3. Add 6 spoonfuls of peanut butter and mix in for a few minutes.

4. Add salt and pepper to taste

5. Enjoy!
